
GINGER"S Ideas for dry beans given at "Home Making" Relief Society Meeting
This is for all varieties of dry beans. The beans need to be hydrated before bottling so the beans are soft and they will cook completely through and kill all the botulism spores that are in beans.
After washing the beans, hydrate the beans by one of two ways:
1-Soak for 12-18 hours before bottling
2-A quicker method is to cover the beans with water and boil for 2 minutes. Then cover with a lid and let soak for 1 hour.
Heat the beans so they are packed hot. Fill bottles with beans and the water they soaked in. Leave 1" headspace. 1/2 tsp salt may be added. The bottle will look like it is about 2/3 beans.
Pressure Quarts 90 minutes at 13 lbs. of pressure
Pints 75 minutes at 13 lbs. of pressure
